The late EU Standards promote more and more the renewable energy sources utilization for the electricity and heat production. In this framework biofuels assume a basic role and, among them, biodiesel is a good alternative to fossil fuels. The paper considers the frying oils and facts that derive, by a transesterification process, from fast-food networks, restaurants and catering establishments in the provinces of Savona and Palermo. The paper draws up the list of the most important EU and Italian biodiesel Standards and describes both the used frying oils - fats collection and their utilization in the production of methyl esters of higher fatty acids, namely biodiesel, that are used in diesel engines for cogeneration plants and vehicles.

Abstract
