Environmental concerns are growingly influencing tourist behaviour and consumption patterns. Relatedly, they notably represent a major driver of innovation for both tourism companies and destinations. The adoption of “greener” and more sustainable strategies by tourism companies can turn into a driver of value creation, which well fits with the evolution of tourist preferences. Given that, the chapter explores extant literature on green and sustainable innovation in the tourism industry, to scrutinise how this kind of innovation can stimulate value creation for tourism companies and destinations. For this purpose, a systematic literature review is performed on more than 100 journal articles ad-dressing green and sustainable innovation in the tourism industry. Findings support scholars to identify main streams and gaps in this research do-main to guide future studies. The results return a picture of a fragmented re-search field – in terms of both scope of analysis and methodological approach – that certainly requires further investigation.
