Enzymes are proteins that catalyze chemical reactions. Some of them have been widely used to improve industrial processes and to produce food and beverages. Pectinases, xylanases, and tannases are enzymes used during fruit juice clarification since they are able to degrade some biopolymers or compounds present in the fruit’s cell wall. However, their features depend on numerous factors that can vary from production to industrial application. This chapter described a workflow for the bioprospection of industrial enzymes intended for fruit juice clarification.
